Galaxies are pretty nice, but not the nicest there is. They are pretty close, though. And yes, I would definitely recommend the Nexus 7. You can get the second generation 16 gig Nexus 7 for about 220 bucks, and it knocks the pants off of an iPad Mini, and even a full-sized iPad. It's using a 1.6 GHz Snapdragon quad-core processor and has full 1080p HD. My Nexus is a first gen, which is a bit less powerful and with a slightly less impressive display. It's using a 1.4 GHz Tegra 3 quad-core and has a 720p display. You can get a 32 GB first gen Nexus 7 for about 20 bucks cheaper than a second gen, which I'd recommend over a second gen since I know for sure the first gen 7 is a damn good tablet.

$150 is too expensive for a GPU? Especially when it's much better and much longer-lived than Intel graphics.
But I'd recommend the least expensive one then spending about 100 bucks to upgrade the RAM and HDD to be equal to the most expensive one by ordering the RAM and Hard Drive. An additional 2 GB or RAM and a 1TB HDD would be cheaper than purchasing the laptop that comes with that stuff, which is how Apple rips you off.

Knowing Intel graphics, probably not much. Intel graphics suck, anyway. For power and longevity, I really suggest you find a cheaper way to get nVidia with it, such as some way to plug an offboard GPU in by USB. I'll look into that for you.
I would try and say to look at value, but you seem set on a Mac. Maybe we can at least look into getting you set up with a copy of Windows 7. Home Premium costs about 100 bucks, so there's always that. The only two issues I have with Mac anyway are the OS and the price. The hardware's pretty good, actually.

If I need windows I will use wine or bootcamp. Macs come with Thunderbolt 2 now which can be used to moun external GPUs I think. My dad got a fusion drive with thunderbolt and said he got top of the range everything except GPU which leads me to believe I can get a GPU.
